Baked Apple Pie Oatmeal - The Cleveland Moms

Heather Athens from Grateful Kitchen Provision shared an easy dairy-free, vegan breakfast.  (You can also make it gluten-free! )This easy and nutritious breakfast recipe is sure to be a hit with the whole family especially on a cool morning.

Baked Apple Pie Oatmeal

1 cup old fashioned oatmeal                                                                                             

1 cup quick oats

¼ cup flax seed

½ tsp Himalayan pink sea salt

1 tsp apple pie spice mix

2 eggs, beaten baked apple pie oatmeal

½ cup unsweetened apple sauce

¼ cup maple syrup

¼ cup coconut oil, melted

1 cup apple, diced

½ cup walnuts, toasted

½ cup currants (optional)

~Preheat oven to 350F and line your baking sheet with parchment paper.

~In a large bowl mix together the old fashioned oats, quick oats, flax seed, salt and apple pie spices.

~In a small bowl mix together beaten eggs, apple sauce, maple syrup, and melted coconut oil.  Add this mixture to the dry ingredients and fold in diced apples, walnuts and currants.

~Spoon approx. ¼ cup of the batter onto the parchment lined cookie sheet.  Spread slightly with the back of the spoon as they do not spread while cooking. 

~Bake 15-20 minutes until set.  Let cool on the cookie sheet and then transfer to an air tight container.

Dairy Free

To make Gluten Free substitute oatmeal with Gluten Free oatmeal.

To make Vegan substitute eggs for flax eggs.
